- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 eggs
- ½ cup sour cream (or Greek yogurt)
- 1 tsp vanilla extract
- 1 ½ cups fresh blueberries (or frozen, unthawed)
- For the Crumb Topping:
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ tsp cinnamon
- ¼ cup cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- Prepare the Cream Cheese Filling: In a bowl, beat the softened cream cheese and ¼ cup sugar until smooth. Add the egg yolk and vanilla extract, mixing until well combined. Set aside.
- Prepare the Cake Batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream the butter and ¾ cup sugar until light and fluffy. Beat in the eggs one at a time, then add sour cream and vanilla extract, mixing until smooth. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the blueberries.
- Prepare the Crumb Topping: In a small bowl, combine flour, granulated sugar, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Assemble the Bars: Spread the cake batter evenly into the prepared pan. Spoon the cream cheese mixture over the batter and gently swirl with a knife. Sprinkle the crumb topping evenly over the top.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely in the pan before cutting into bars.
