  • 2 teaspoons baking powder (8 g)
  • 1/4 teaspoon salt (1.5 g)
  • 3/4 cup milk (180 ml)

  • 6 Tablespoons butter (85 g)
  • Ground cinnamon (for sprinkling)


Instructions

  1. Preheat and Prepare Pan
    Preheat your oven to 350°F (175°C). Slice the butter into pieces and place it in a 9×13 inch baking dish. Pop the pan in the oven while it preheats so the butter can fully melt. Once melted, take the pan out and set it aside.
  2. Mix Blueberry Filling
    In a medium bowl, combine the blueberries, granulated sugar, and lemon zest. Gently stir to coat the berries evenly with sugar and zest.
  3. Make the Batter
    In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk and stir just until the batter is smooth—do not overmix.
  4. Assemble the Cobbler
    Evenly distribute the sugared blueberries in the pan over the melted butter. Drizzle the batter evenly over the berry layer, letting some berries peek through. Sprinkle a light dusting of ground cinnamon over the top.
  5. Bake
    Bake the cobbler in the preheated oven for 35–40 minutes, or until the top is lightly golden and the fruit is bubbling around the edges.
  6. Serve
    Let the cobbler cool slightly, then serve it warm—ideally with a scoop of vanilla ice cream or dollop of whipped cream, if desired.

Notes

  • If using frozen blueberries, there’s no need to thaw them—just toss them with the sugar and lemon zest while still frozen.
