Fritter Batter

Blueberry Glaze

- ⅓ cup milk
- 2 teaspoons blueberry jam or mashed fresh blueberries
Instructions
- Prep the Oven and Pan Preheat your oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan with non-stick spray to prevent sticking.
- Mix Dry Ingredients In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.
- Combine Wet Ingredients In a separate bowl, whisk together the melted and cooled butter, egg, vanilla extract, and blueberry Greek yogurt until smooth.
- Make the Batter Add the wet ingredients to the bowl of dry ingredients. Stir gently until just combined—do not overmix. Then, fold in the blueberries until evenly distributed.
- Fill and Bake Spoon the batter into each mini muffin cup, filling each almost full. Bake for about 15 minutes, or until the fritter bites are lightly golden and a toothpick comes out clean.
- Prepare for Glazing Remove the fritters from the pan and place them on a parchment-lined baking sheet. Increase your oven temperature to broil.
- Make the Blueberry Glaze In a small bowl, whisk together powdered sugar, milk, and blueberry jam (or mashed blueberries) until smooth and pourable.
- Glaze and Broil Dip the top of each fritter bite into the glaze, then set upright on the baking sheet. Broil for 3–4 minutes, rotating the pan every minute, until the glaze just begins to caramelize. Watch closely to avoid burning.
- Final Glaze and Set Brush the tops with any remaining glaze. Allow the fritters to set for 15 minutes before serving—they’ll develop a delicious, crackly finish.

- Frozen blueberries can be used; no need to thaw, but dust with a little flour to prevent bleeding.
